Guinea Foul

South Africans seldom eat guinea fowl, but when they do, use a special recipe. After plucking and cleaning the bird, it is simmered for seven hours, with local herbs and spices, seasoning and with a brick in the pot. Drain the pot in two stages, to remove fat and then to dispose of the water. Then serve the brick. It will be more tender than the bird.
